French Onion Soup

With the recent drop in temperature, I thought it appropriate to provide you with the most delicious, heartwarming, tasty, french onion soup. This recipe goes way back to the days my siblings and I were snowed in from school and my mom would keep us warm, making us soup and hot cocoa. It’s really satiating and quite easy to make. You can put mozzarella cheese in it, which enhances the flavor and simply adds to the goodness of it all.

Here’s what you need:

* 4 Tbsps. margarine
* 10 cups sliced Spanish onions
* 2 cloves garlic, minced
* 2 quarts water
* 1/4 cup tamari soy sauce
* 1 1/2 tsps. salt
* 1 1/2 tsps. thyme
* 1/8 tsp. pepper

Instructions:

In a 4-quart pot, melt margarine and sauté onions and garlic until soft and golden, but not brown. Add water, tamari, and seasonings. Bring to boil, reduce flame and simmer for 40 minutes. Garnish with toasted croutons and serve hot. Add cheese as desired.
